At Cafe Celeste Bistro we make our Italian sausage in-house rather than buying it in, which is why the Salsiccia Davinci tastes different from anything else in Sherwood Park. The sausage is seasoned with fennel and chilli, browned hard in the pan to build flavour, then finished with sun-dried tomatoes and mushrooms so the sauce carries a sweet-savoury depth without any heaviness.

It arrives at the table hot, glossy and meant for sharing, with a fresh-cut baguette alongside. Two people can happily make it a starter before pasta; four can turn it into part of an antipasti spread with our bruschetta and olives.
